Through studying a degree in nutrition and an interest in reading the latest research around gut health, the biggest take home message for me is diversity. I don’t think about food as restrictive; I consider my diet as a wholesome high plant food diet that is realistic, affordable, sustainable and adaptable to feed the whole family.
Sometimes my eating patterns become stale. I call it the vegemite toast pattern. I get straight out of bed, put the kettle on and sit down to coffee and toast. It’s not diverse. It’s nowhere near the 40-plant food a week target that I aim for. It’s okay to fall here sometimes, but not for too long. It needs a shake-up, to get out of the rut. Why?
When we look at whole foods, each food is made up of different nutrients. Every nutrient has a purpose, a function. The more diverse our diet, the more we fuel our bodies and nourish our gut microbiome.
If my diet goes stale, I like to remind myself of all the foods that my body needs.
